This week our cheese of the week is Celtic Promise.
Celtic Promise is made by John Savage on Glynhynod Farm near Llandysul, Wales and is a Caerphilly type washed-rind cheese with a slightly moist, orange-red rind.
It gets soft and buttery as it matures and also develops a slightly pungent aroma and a delicate, mild flavour creating a delicious contrast with the rind. It is supple, smooth, spicy and aromatic.
Celtic Promise is considered a table cheese but it is also good to cook with when a strong, creamy flavour is required. This is an organic, vegetarian cheese, made with raw/unpasteurised milk.
