Teifi is a Gouda style cheese produced by John and Patrice Savage-Ontswedder on the Teifi farm near Ceredigion, Wales.
It has a dense, smooth and creamy texture. It’s mellow, slightly sweet flavour becomes deeper and richer with age and when very mature develops characteristics similar to Parmesan cheese.
The cheese looses nothing when heated and is excellent toasted or melted.
Teifi is produced with cows milk, is unpasteurized, organic and vegetarian.
