Jared’s featured cheese this week is Mistralou.  

Region – Simiane-la-Rotonde, Provence-Alpes-Côtes d’Azur, France
Milk – raw goats milk
Breed – Rove x 100
Made by – Francois and Vanessa Masto

This batch is young so they have room/time to develop their silky texture and deeper flavour if you want to keep them for a couple of days on the kitchen bench but they are good to eat now, soft, milky, clean, balanced, a great introduction to the new season.
