Coconut jerk pork skewers with mint & red onion yogurt

Ingredients
  1. FOR THE PORK SKEWERS
  2. 750g diced pork (Jacob's Ladder stall)
  3. 5 tbsp of coconut jerk sauce (Kush Cuisine stall)
  4. Splosh of olive oil
  5. FOR THE YOGURT DRESSING
  6. 1/2 a red onion (Brockman's farm stall)
  7. 1 small bunch of mint chopped (Patchwork Farm stall when in season)
  8. 1 tbsp of scotch bonnet & lime jam (Kush Cuisine stall)
  9. 1 clove of garlic chopped (Brockman's farm stall)
  10. 2 tbsp of lime juice (Brockman's farm stall)
  11. 1/2 tsp ground cumin (Grain Grocer stall)
  12. 250g natural yogurt (Hook Dairy stall)
  13. 1 tomato seeded and chopped (Wild Country Organic stall when in season)
Instructions
  1. FOR THE PORK SKEWERS
  2. Soak the wooden skewers for at least 25 mins in water
  3. Mix the diced pork with the coconut jerk sauce and marinate for at least 45 mins
  4. Pre-heat the oven to 180˚C
  5. Put the oil onto a baking tray and heat up until hot
  6. Take out the over and add the skewers on top
  7. Heat for 5 minutes before turning over
  8. Serve with rice and yogurt dressing
  9. FOR THE YOGURT DRESSING
  10. Combine all the ingredients above and mix well
  11. Serve alongside the pork skewers for a delicious combination
Notes
  1. You can get lots of different types of rice and other grains such as quinoa, millet, cous-cous etc at the Grain Grocer stall in the courtyard, as well as nuts, oils, spices, dried fruits and munch munch more.
