Coconut jerk pork skewers with mint & red onion yogurt

Ingredients
- FOR THE PORK SKEWERS
- 750g diced pork (Jacob's Ladder stall)
- 5 tbsp of coconut jerk sauce (Kush Cuisine stall)
- Splosh of olive oil
- FOR THE YOGURT DRESSING
- 1/2 a red onion (Brockman's farm stall)
- 1 small bunch of mint chopped (Patchwork Farm stall when in season)
- 1 tbsp of scotch bonnet & lime jam (Kush Cuisine stall)
- 1 clove of garlic chopped (Brockman's farm stall)
- 2 tbsp of lime juice (Brockman's farm stall)
- 1/2 tsp ground cumin (Grain Grocer stall)
- 250g natural yogurt (Hook Dairy stall)
- 1 tomato seeded and chopped (Wild Country Organic stall when in season)
Instructions
- FOR THE PORK SKEWERS
- Soak the wooden skewers for at least 25 mins in water
- Mix the diced pork with the coconut jerk sauce and marinate for at least 45 mins
- Pre-heat the oven to 180˚C
- Put the oil onto a baking tray and heat up until hot
- Take out the over and add the skewers on top
- Heat for 5 minutes before turning over
- Serve with rice and yogurt dressing
- FOR THE YOGURT DRESSING
- Combine all the ingredients above and mix well
- Serve alongside the pork skewers for a delicious combination
Notes
